vegetable quinoa soup: It is very easy to make

Ingredients:

  1. 2 teaspoons olive oil
  2.  1 onion diced
  3.  2 cloves garlic minced
  4.  1 cup thinly sliced mushrooms (about 115 g)
  5.  1 sweet potato (about 340 g) peeled and diced
  6.  2 cups homemade vegetable broth or organic vegetable broth
  7.  1/2 cup quinoa
  8.  1/2 teaspoon pepper
  9.  1/4 teaspoon salt
  10.  2 cups stemmed kale thinly sliced
  11.  1 tablespoon red wine vinegar

 

Recipe:

 In a large casserole, heat oil over medium heat; cook onion and garlic, stirring occasionally, until softened, approximately 5 minutes. Add mushrooms; cook for around 4 minutes, stirring occasionally, until it begins to soften.

 

Stir in the sweet potato, 3 cups of water, broth, quinoa, pepper, and salt; bring to a boil. Reduce heat to medium; cook for 10 to 12 minutes until the quinoa is tender.

 

Stir in the kale; cook for about 4 minutes until tender. Stir the vinegar.
